Using a secret ingredient, this Tortellini with Mushroom Alfredo Sauce stays creamy and delicious but is low fat! Yes, I said low fat Alfredo that is creamy AND delicious!

This weekend was JAM PACKED!  We dropped the girl off at Grandma and Grandpas Friday morning.  Poor Dad.  He’s not used to getting up that early since he retired.  LOL

She LOVES visiting them and has since come to realize that we’re not leaving here there, and they’re good peeps!  They feed her and walk her and pet her and pay attention to her.  She didn’t even try to bolt this time.  YES!

We did that cause we went here on Friday after work:

 

Yup!  S bought us tickets to a Nats game.  They played the Padres…and WON!  There was  Groupon offer for them.  $15 a seat.  In the SWELTERING sun.  MAN it was HOT!  There was literally NO breeze!  We stood in the shade for almost all of the first three innings until the sun went down behind by upper deck.  Even then…it was JUST bearable.

I prepped and drank a BUNCH of water before going and drank iced tea at dinner and had a soda (yeah I know…not the best) in a souvenir cup.  LOL 

We ate at the Red Porch.  Meh.  We were only allowed an hour to dine, and I think we spent almost half of that trying to get the wait staff’s attention.  At one point, I was literally waving my arms in the hair saying, “Excuse me!” and STILL didn’t get anyone’s attention. 

S had the burger.  I had the steak sammie, which I would only order again if I omitted the onions.  They were SMOTHERED in thyme.  Normally I like thyme, but this was WAY TOO MUCH!  I couldn’t even taste the steak.  I wound up moving them off and eating the steak with my fork.  Fries were good though!

And OF COURSE you can’t go to a ballpark without having a hot dog!  That was the 3rd inning before we sat down.  Man.  What do they do to them there that I can’t do at home?  It was YUM-my!

At the Nats games there’s the Pressies.  They’re funny all lopsided and top heavy.  They were dancing in the 7th inning stretch.  It was TOO funny!

They were up 8 to 5 and wound up winning with that score when we left.  It was a SLOW game and the top of the 8th was around 10 or so?  Of course, we got home and felt completely icky from sweating all night.  Blech!  And missed the girl.  *pouty face*

Saturday was new glasses, pick up the girl, Jersey Mike’s subs, and MOVIES!  S had to work Sunday.  *pouty face again*  And will probably have to work next Sunday, too.  *sigh*

BUT this was a FAB-ulous #MeatlessMonday meal.  I’m LOVING the processed cottage cheese in low fat Alfredo sauces.  It’s so tasty!

Heat a large skillet over medium-high heat. Add margarine or butter and swirl to coat. Add mushrooms and saute until brown and the liquid has evaporated.  Combine the cottage cheese and cream cheese in the bowl of a food processor and process until smooth. Add Parmesan cheese and pulse until combined. Add pasta to mushroom mixture and stir to combined. Fold in cheese mixture and cook until heated through.

It’s so simple, yet tastes SO wonderful!

Tortellini with Mushroom Alfredo Sauce

Using a secret ingredient, this Tortellini with Mushroom Alfredo Sauce stays creamy and delicious but is low fat! Yes, I said low fat Alfredo that is creamy AND delicious!

Ingredients

  • 18 ounces fresh whole wheat, three cheese tortellini (Buitoni)
  • 1 cup fat free cottage cheese
  • 2 ounces low fat cream cheese (Neufchatel)
  • 1/2 cup reduced fat Parmesan cheese, grated
  • 3 cups mushrooms, sliced
  • 2 tablespoons margarine or butter

Instructions

  1. Heat a large skillet over medium-high heat. Add margarine or butter and swirl to coat. Add mushrooms and sauté until brown and the liquid has evaporated.
  2. Cook pasta according to package directions omitting fat and salt.
  3. Combine the cottage cheese and cream cheese in the bowl of a food processor and process until smooth. Add Parmesan cheese and pulse until combined.
  4. Add pasta to mushroom mixture and stir to combined. Fold in cheese mixture and cook until heated through.
