Three-Step Taco Salad

Sharing is caring!

Three-Step Taco Salad recipe
Cooking Light, July 2003

Yeah, it was taco salad. I like the other recipe better for some reason. There were WAY too many black beans. I would cut that in half. The “dressing” was interesting. CTM doesn’t like sour cream all that much, so he just put salsa on his salad.

I used Penzey’s taco seasoning mix. It looked like A LOT of seasoning mix, but it didn’t taste like a lot. It was a little the on salty side, so I was pretty thirsty a couple of hours after eating. I’m sure you’ll get that with any prepackaged taco seasoning mix.

I just noticed that the picture doesn’t really show baked tortilla chips. They all look the same and none of them that I’ve seen look like the ones in the picture.

I have some for lunch today. There was WAY too much salad left over so I put it in a container and put the meat in a separate container so I could heat it up by itself. Like I said, I like the other recipe better so we’ll probably make that one again instead.

Measuring cups and spoons
