I am totally LOVING this carbonara thing. It is a quick and TASTY #MeatlessMonday meal. I make it meatless. I suppose TECHNICALLY it’s supposed to have bacon or prosciutto, but I make it meatless because it’s such a yummy dinner for a meatless Monday. I supposed I COULD sprinkle with some bacon but that would be against the rules of #MeatlessMonday in my opinion.
Okay. I just have to insert a bit of a vent here. It’s something that’s REALLY been bugging me lately. Just because you CAN drive in that lane, doesn’t mean you SHOULD drive in that lane.
You see, we have these HOV lanes here. You know, high occupancy vehicle lanes? Well, if you have 2 or more people in your vehicle, you can drive in certain lanes that are supposed to be a bit faster during rush hour. SUPPOSED to be. However, there are those that feel they MUST drive in that lane even though they’re not actually driving any faster than the cars in the other lane.
The whole POINT of the HOV lane is to be moving faster than the other traffic. So, why in the WORLD would you camp out in that lane and drive the same as everyone else? It sort of defeats the purpose of the HOV lane, entirely!! *sigh* So, just because you CAN drive in that lane doesn’t mean you SHOULD drive in that lane. And it doesn’t mean that you HAVE to drive in that lane. Honestly, if you’re going to drive as slow as everyone else, you really should move over. Just sayin…
And while I’m on the subject…
It’s not the first snow we’ve had, but it’s the first really good icing with snow we’ve had. Consequently, it took a minute to clear the snow and ice off the windshield. That being said, it totally and COMPLETELY amazes me that some drivers felt safe enough to drive in these conditions with 3 of their 4 viewing surfaces completely or even partially covered.
If all you can see is out the front windshield, then you need to pull over and scrape some more. You can’t see anywhere but in front of you, which is so not good. You don’t even have the benefit of any side or rear mirrors. So, on behalf of all the other drivers on the road, PLEASE PLEASE PLEASE clean your car off before you get in it and endanger everyone else on the road.
Okay…I now return you to this delicious meal.
I wanted to make carbonara, but with a little bit more umph to it. Not just regular pasta, but I was thinking tortellini or ravioli. Then I wanted some veggies to go with, so I just KNEW mushrooms were the way to go. Now my mind is racing of other ways to use this type of sauce method. It’s super simple!! And I can’t explain how delicious it truly is. The egg mixes with the cheese and makes a yummy sauce that coats the pasta perfectly.
I’m sure you have everything you need to make this in your pantry and fridge. It’s that easy. And with these record low temperatures sweeping across the US, you’d best stay in, whip up a pot of this and watching some movies…or some football. Basically, just stay in and stay warm.
Ravioli Mushroom Carbonara
Ravioli Mushroom Carbonara for a Quick #MeatlessMonday Meal. Ravioli make the most delicious pasta to use for this carbonara. The combination of Parmesan and ricotta is just delicious!
Ingredients
- 8 ounces cheese ravioli
- 1 tablespoon butter
- 4 cups cremini mushrooms, chopped
- 4 cloves garlic, minced
- 2/3 cup egg substitute
- 1/2 cup Parmesan cheese
- 1 teaspoon garlic salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet coated with cooking spray over medium-high heat. Add butter and stir until melted.
- Sauté the onions and garlic 3 minutes or until soft. Add the mushrooms and cook until browned and the juices have released. Remove from heat and keep warm.
- Combine the egg substitute, Parmesan cheese, garlic salt and pepper in a large mixing bowl. Set aside.
- Cook the pasta according to package directions omitting salt and fat. Drain. Immediately toss the pasta with the Parmesan mixture and stir until combined and the Parmesan is melted. Stir in the mushroom mixture and serve.
