So, I’m not really sure WHAT the tomatillo salsa does for this recipe. I may try it with regular salsa next time and see if that makes a difference.
The mangoes were UBER ripe and tasted almost as sweet as candy!! I don’t think there was enough of them in the mix, though. I did add some jalapeno chopped up in the mix to make it more like a salsa than a salad and I omitted the rice. Just not sure what that was for, either.
I think next time, I’ll add some red onion and top with the scallions. For some reason, it wasn’t salsa-y enough to suit, but it did go VERY well with the Jamaican Chicken Thighs.
