Forbidden Cremini Chicken

I say forbidden chicken because it’s got some forbidden rice in it. You’ve heard of forbidden rice yeah? No!?!? Oh my.
Forbidden rice is simply black rice. But, leave it to people to put a serious value on an item they’re just not familiar with. The Chinese believed it to be so rare and elite that it was reserve only for royalty to eat. Hence the “forbidden” part; it was forbidden for anyone other than the emperor or other royalty to eat this type of rice. *shrugs*
Fast forward a few centuries and here we are discussing this rice, which is pretty readily available in most areas now. And, no, it’s no longer forbidden…that I know of anyway. Lotus foods was kind enough to send me a delicious sample of this rice. I love their motto, “More Crop per Drop.” Really does send a message doesn’t it?
Back to the rice! So, this rice has as many antioxidants as blueberries. Can you imagine that? I thought the delicious berries were the be all end all for antioxidants. But, this goes toe to toe with those berries. Apparently, the antioxidants are what give these foods their color. So, the darker the purple color, the more it has. Food for thought! No, seriously, I didn’t know that.
If you know me and you’ve read my blog a few times you’ll know that I could honestly eat my weight in rice. I love rice. Like, could eat it every day and never get tired of it. My husband laughs because they serve a lot of rice where he works. He doesn’t think I’m serious when I say that. Of course, I say that about sandwiches and popcorn, too.
But seriously, if I had this rice on my plate I totes would eat it daily!! It’s oh so nutty and delicious. And, it’s the perfect complement to the jasmine rice I paired it with in this delicious slow cooker dish of chicken and mushrooms.
Can you honestly tell me that you don’t want to dive into that plate? Just look at that creamy, cremini filled sauce sitting on top of that chicken and rice. See those flecks of thyme in there? You can’t sit there and not be drooling right this very minute. I am and I just ate dinner!!
Grab a fork. Dive in. This dish has amazing flavors and textures. It’s definitely one that I will be putting on the menu again and again.

Forbidden Cremini Chicken
Creamy and comforting chicken with cremini mushrooms is served with a tasty jasmine and forbidden rice blend. Forbidden Cremini Chicken should never be forbidden in your kitchen!
Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 2 cups sliced mushrooms
- 1 cup sliced onions
- 10 ounce cream of chicken soup
- 2 teaspoons garlic salt
- 2 teaspoon dried thyme
- 1 teaspoon rosemary
- 4 cups cooked rice
- 1 cup cooked forbidden rice
Instructions
- Combine first seven ingredients (chicken through rosemary) in the liner of a slow cooker coated with cooking spray. Cook on low 8 to 10 hours or unti the chicken is fork tender.
- Divide the rice evenly between 4 plates and top with the chicken mixture.
