Cilantro-Lime Chicken with Avocado Salsa recipe

I hate cilantro, so I didn’t use any. I just marinated the chicken in the lime juice. I could taste a little of the lime, but not much. Next time I may put some of the rind in with the chicken to marinate.
The salsa was good. I wanted it to have more lime taste to it. I couldn’t taste the lime at all. It did prevent the avocado from browning the next day. I did take the left overs for lunch and it was even better the second day. We served this with rice a roni whole grain spanish rice.

  1. Oh, I don’t feel bad. It makes he HERCK!!! The first time I tried it, I thought it was parsely in some chicken chili. Almost tossed dinner right then and there! *snort*

  2. This is on my list, but we had cumin chicken with avocado sauce last week, so it will be in the future.

    Don’t feel bad about not liking cilantro. It apparently is a food that you like or you don’t. No in between.
